Singapore Chow Mei Fun

Ingredients

CCF Vermicelli Noodles
 
Chicken breast
 
Veg (1 Carrot (strips), Cabbage, 1 Onion (sliced thinly))
 
Char Siew
 
Chinese sausage
 
Shrimp (peeled)
 
2 Red cut chilli / chilli flakes
 
2 Beaten eggs
 
Curry powder (1 tbs)
 
Shaoxing wine (1 tbs)
 
Soy sauce (1 tbs)
 
Vegetable oil (1 tsb)
 
Asian sesame oil (1/2 teaspoon)
 
2 Green onions (chopped)

 


Method

1. Throw chinese sausage (12 mins) and chicken into boiling water
 
2. Soak rice noodles in hot water until soft
 
3. Beat the eggs, defrost frozen shrimps, chop up veg and chicken
 
4. Place pan (non-stick) over medium heat
 
5. Add 1 tbs of veg oil
 
6. Fry shrimp for 1 minute, then remove from pan when tender
 
7. Add vegetables and chilli, pan fry for 3-4 mins (continuous stirring)
 
8. Make space in the middle of the pan by pushing the veg aside
 
9. Pour eggs in and scramble them by scraping from the bottom for 1 min
 
10. Add drained noodles onto the pan, followed by the chicken, chinese sausage and shrimp
 
11. Lastly, add curry powder, shaoxing wine and soy sauce
 
12. Mix for a min before adding green onions and sesame oil
 
13. Stir and top off your dish with char siew
 
14. Dish is ready to serve.
